GRAPE VARIETIES: Chardonnay 40%, Gewürztraminer 40%, Pinot Noir 20%.
The estate is separated into individual vineyards. The grapes for this wine are from the Torresales and Montesa vineyards. Vines are trained on wires using a trellised system to a height of 1.8m, and are pruned to leave a single spur, know as the ‘unilateral cordon royat’. There are 4115 vines per ha. producing 1.5kg of fruit per plant.
3rd week in August. Night harvest between between 12.00am and 8.00am. Grapes are selected by hand in the winery.
Each variety is handled separately. Following a three hour cold maceration the grapes are gently pressed.
The must is then left to settle after which it is fermented at 14ºC in temperature controlled stainless steel tanks. The wine from each varietal is then blended together before being aged.
Aged on lees in new french oak barrels with an extra fine grain for four months with daily ‘bâton-nage’, or stirring.
COLOUR: Pale yellow with pearlescent hues.
AROMA: Intense aromas of tropical fruits, rose petals, a touch of sweet spice oak from the barrels.
TASTE: Rich, well balanced with good acidity and a long, elegant, finish notable for its flavours like those of the wine’s aromas.
